Shades of Brown
Decoction, milk and brass, poured the old way.
Decoction drips through a brass filter overnight. Milk is boiled, sugar stirred in, and the whole thing is poured from a height until it foams.
the way most homes pour it
Poured in brass, the old way.
A tumbler and a dabara, both too hot to hold by the body. Brass keeps the coffee warm and the habit unchanged.
First, the lift.
The tumbler rises above the dabara. The higher the pour, the finer the foam, so nobody rushes this part.
Then the long pour.
One unbroken stream, close to an arm's length. It cools the coffee and folds the milk through the decoction.
Foam, then quiet.
A soft crown settles on top. Drink it before the foam sinks back.

Rootedin the Ghats.
Karnataka’s coffee grows in the rain-fed hills of the Western Ghats, where it has been grown for more than three hundred years.
Grownin the shade.
Here coffee grows under silver oak and jackfruit, with pepper vines climbing the trunks. Shade slows the cherry down and sweetens it.
Pickedby hand.
Ripe red cherries are picked by hand, row after row, through the winter harvest.
